Israeli Chickpea Hummus
Hummus is popular world-wide now, flavored with herbs, peppers and more. The Israeli version more likely is made with tahini, chickpeas and paprika.
Makes 4 Servings
Cooking + Prep Time: 1 hour & 20 minutes + overnight chilling time for chickpeas
Ingredients:
1/2-lb. of chickpeas, dried
1 tbsp. of baking soda, pure
7 unpeeled cloves of garlic, large
1/2 cup of oil, olive
1/4 tsp. of cumin, ground + extra for garnishing
1/2 cup of tahini
1/4 cup + 1 tbsp. of lemon juice, fresh
Salt, kosher
To garnish: paprika, sweet
1/4 cup of parsley, chopped
To serve: pita bread
